1Add salad ingredients to a large bowl and refrigerate until ready to use.
2Add dressing ingredients in a small glass jar with a lid. Shake well to mix.
3When ready to serve salad, add dressing to salad and gently toss.
1 can sweet corn, drained
1 avocado, diced
1 cup cherry tomatoes, cut in half
1/2 small red onion, finely diced
1/4 cup feta, crumbled
1 cup English cucumber, peeled and diced
3 tbsp olive oil
1 tbsp red wine vinegar
1/2 tsp garlic powder
1 tbsp fresh cilantro, minced
1/4 tsp salt
1/4 tsp fresh ground pepper
